Dear Members,
It is a great time to come out and tour the farm!  The fields are dry enough to walk to and we have lots of baby plantings to show off.  Come out on Thursday, June 2nd at 2:00 for a free 50 minute tour.  Feel free to invite your friends.  They can shop in the farm stand and pick up a coupon for a discounted first CSA box.
 
Summer produce is being harvested and it is not even summer yet!  Zucchini and cucumbers are growing so abundantly we are putting them in your CSA this week.

 

 

Want strawberries?  Extra salad?  Mushrooms or bread?  How about guaranteed carrots!   If you create a “standing order” you will get it in your CSA box before it goes into the store. It is best for us that you manage your extra purchases yourself, but if you need help, we will gladly assist you. Just hit reply and let us know what you would like added on to your CSA.

Produce Box:  
Salad Mix, Bok Choy, Spring Onions, Cilantro, Cucumbers, Kale, Carrots on Thursday, Beets on Tuesday.
 
Spicy “everything” topping

I have been playing around with fresh and spicy toppings for my meals.  I love to add tomatoes when they are in season, but without them, I am actually more creative. Try this!

1 cucumber, chopped peel included.

1 bunch radishes minced.

1 bunch cilantro, chopped.

2 spring onions minced.

1 or 2 hot peppers (to taste) –

Lemon – to taste

Method:  Prepare all the vegetables and keep them separate.  In a blender, combine 1 pepper (to start), 1/4 cup cucumber, 1/4 cup cilantro and a splash of lemon.  Blend well adding a splash of water if needed.  This is your dressing. Combine all ingredients in a bowl and chill for an hour before serving as a condiment.  This is very adaptable.  Other veggies to consider in the mix include:  Turnips, fennel, beets (I suggest par-boiling the beets), parsley, tomatoes – in season, zucchini.

Strawberries are in full swing!
Throughout the season, it is my aim to include a basket of berries in the juicing boxes weekly.  Before the citrus runs out, I suggest you try this wonderful Moroccan recipe using your Laguna Farm strawberries!
Blend:  1/2 basket frozen strawberries with 1 cup orange juice and a handful of ice.  Most recipes call for sugar to taste, but I recommend honey or even just letting the sweetness of the berries shine through.
