Dear Members,
The past several days has been all about transplanting our seedlings and enriching the fields with compost and soil amendments.  Photographs say it best, so here is a visual tour of the farm activities.

This huge pile of compost is just but one of the many loads that were delivered.

Lime, sulfur and potash are just a few of the amendments that went into the organic compost blends. After testing the soil to learn what nutrients are needed in various fields on the farm, we were able to mix custom blends based on the soil’s needs.
The compost spreader is distributing the amended compost on the field.
This is all so we can have enriched soil to grow the beautiful produce you found in your box this week.  Above is the lettuce and spinach just before harvest.

Produce Box:  
Salad Mix, Spring Onions, Lemons, Basil, Kale, Spinach, Beets on Tuesday and Carrots on Thursday.
Spinach. So versatile!

I love having spinach in the fridge.  It is one of those vegetables that can be used in so many ways.
1.  Replace the lettuce on your sandwich or wrap.
2.  Blend it into a fruit smoothie.
3.  Lightly steam it and serve with salt and pepper and a pad of butter.
4.  Incorporate it into your salad.
5.  Lay a bed of spinach on your plate and top with eggs, potatoes and salsa for a breakfast salad.
6.  Eat it raw, out of the bag, instead of potato chips. (I’m serious about this!)
7.  Add to any omelet or fritatta and enjoy the sweet and nutty flavor.
Juice Boxes
Spinach, Kale, Carrots, Beets, Strawberries, Oranges, Lemons.

Carrot Juice
I love a great juice blend. I especially love a smoothie with tons of different fruits and veggies. Even with these strong preferences it is often nice to have one ingredient juice.  My choice?  Carrot juice! Take 1/2 of a bunch of carrots, run it through your juicer and top with a sprig of mint if you are fancy.  Here is a toast to what we expect to be a long and abundant season for carrots.  Cheers!
