With the recent rains, our lower fields are saturated to the point of flooding. This is a good thing during this time of year as our summer fields are at rest and those pesky gophers who are the bane of many are swiftly finding that Laguna Farm is NOT the place to be.  Come on out in the next few days and see if the water reaches the parking lot!

 

Don’t worry about your much loved produce.  Nacho was well aware of the forecast so Friday he and the crew harvested all of the remaining carrots, beets and parsnips. In the coming months, your roots and greens will come from our fields above the floodplain.
Note:  The farm store will be closed               Wednesday 1/20/15.

Produce Box:  
Salad Mix, Turnips or Beets, Cilantro, Parsnips, Garlic, Broccoli, Saute’ Greens
Parsnips, so sweet!
Parsnips are a wonderful root when grilled in the oven.  It is important to peel them as the skin can be tough.  Once peeled, cut to wedges and rub with olive oil and a dash of salt.  Put in the oven at 400′ and watch closely. Your parsnips will be fork tender and slightly browning at the edges.  Enjoy!
Parsnips can be roasted with turnips and beets too.  Just peel (or not) your beets then treat as you did the parsnips. All three roots take the same time to roast, so feel free to experiment.
Juice Boxes
Carrots, Apples, Oranges, Beets, Chard, Baby Greens, Tangerine.

 

Apple Orange Juice
What is best, apple or orange juice?  I say both!  By combining at a ratio of one apple to two oranges, you get a nutritious juice that is not too sweet and not too acidic.  I always suggest adding a splash of water so your juice is not too strong. Once you have juiced your fruit, consider blending in some baby greens.  Your mix comes with chard, kale, spinach, mustard, boc choy and more. Juicing is a great way to introduce kids to new fruits and vegetables.  The bright colors and sweet taste is inviting.  Be sure to go easy at first and don’t be afraid to dilute with water.
