Dear Members, 

      For the first time in over ten years, we are not putting salad in your produce box.  Those who have “add-on” salad, will be receiving your additional 1/2 pound, but because the lettuce is growing so slowly, we thought we would take a week off from harvesting the salad mix and give you a bag of spinach instead.   
     Over the past few weeks we have been focusing on updating our member information.  We are noticing a lot of questions being asked that are addressed in the newsletter.  Please let us know if there is an e-mail that you would like farm information to be sent to so we can continue to be in touch.
     If you know of someone who is interested in the fresh and local winter abundance, please encourage them to join Laguna Farm.  Moving into spring, we are aiming to increase our membership.  If your name is mentioned by a new member, we will credit your account by $5.00 as a thank you.  All new members should sign up with coupon code:  “newcsa” for a $5.00 discount.

Mushroom Salad
Produce Box:  
Spinach, Gourmet Mushrooms, Kale, Carrots, Onions, Butternut Squash, Tangerines.
Gourmet Mushrooms:
Your produce box contains 1/3 pound of either brown clam shell, alba clam shell or trumpet royal mushrooms.  You don’t really need a recipe to enjoy these Sebastopol grown delicacies as a simple saute’ with butter and salt make them perfect for any application.  
Identifying Your Mushrooms: 

Please peruse the Gourmet Mushroom website and learn what variety you received in your box.  From there, they have some recipes and suggestions on how you can use your mushrooms.  I found great suggestions on adding them to parsnips, eggs, salad and even the grill!

Juice Boxes
Carrots (2 bunches), Celery, Apples, Tangerines, Kale, Spinach.

Rise And Shine Juice!
5 to 6 ounces baby spinach leaves, rinsed
2 apples, halved and cored
2 medium carrots, scrubbed
2 celery sticks
1/2 large lemon
One 2-inch piece ginger, peeled
Ice or not
This morning up-lifter is often made by passing all the fruits and vegetables through a juicer.  I suggest juicing the carrots, apples, celery, lemon and ginger with a juicer then adding the juice along with the spinach to a blender.  This way you are getting the most out of your spinach.
