From 4:00 to 7:00 we invite you to enjoy a picnic under the oak tree.  We will host an informal tour, enjoy a potluck picnic, a small camp-fire and a clothing swap.  Wow!   What a fun-filled night, not to be missed!  So save the date, and any gently-used clothing that you can donate to the swap, and Join Us!

Updates from the farm:  
     Bunnies:  Miss K is happy to report that her bunnies are doing well and they are old enough to tell what ones are the boys and what ones are the girls. Names are coming!
     Green Beans:  Remember those frost nipped green beans I reported about a few weeks back?  They are being harvested and will be in the Thursday boxes this week.  We are so grateful that those plants perservered and grew into tasty beans that will be delivered so fresh you can eat them raw.
      Pegomya hyoscyami (or leaf miner) seems to be under control after damaging an entire crop of chard and the tops of the beets a few weeks back.
     Juice Boxes:  We launched an alternative CSA box several months back.  We are seeing an increase in sales with this box as several members are getting both the “Produce” box and the “Juicing” box.  Ask us if you would like to add a Juicing box onto your weekly share.
     Want to see Jennifer out of her comfort zone?  I have a series of videos that were filmed both on the farm and in my kitchen.  I hope to give interested prospective members an idea of what to expect with their Produce and Juicing boxes as well as how to pick up their veggies on the farm.  Go to our website and click on videos.  I am interested in knowing if there is a video that might be helpful that I can include in our library.

Produce Box Contents:
Salad Mix, Spinach or Green Beans, Zucchini, Cilantro, Cucumber, Cauliflower.

Grate 1/2 large or 1 small cauliflower or use a food processor to pulse into the right texture. Work in batches.  If the processor is overloaded, the cauliflower won’t chop up evenly.

Heat a large pan to medium-high and add 2 TBSP coconut oil. When the oil is melted, add 1/2 yellow onion diced and 2 minced cloves of garlic. Cook until just translucent, then add the riced cauliflower. This is one time when overcrowding a pan and creating steam works to your advantage.  For this recipe, we don’t want browned cauliflower-just gently cooked through. Give it about 5-7 minutes.  Add in the lime zest and 1/2 Cup fresh cilantro. You may also want to add a bit of salt and pepper too; season to your preference.  Mix together in the pan (enjoy the smell!) and transfer to a serving dish.  Squeeze the fresh lime juice over the rice and serve.

Carrots (2 bunches), Nectarines, Cilantro, Kale, Spinach, Lemons, Cucumbers.

Refreshing Carrot Drink
I often think of carrot juice with apple and ginger as a warming winter option.  Now that the days are warmer, I am looking for a refreshing recipe that utilizes our farm fresh carrots.  Let’s try this one together!  
Directions:  Place 1 cup chopped carrots, 1/2 cup vanilla yogurt and 1 cup fresh orange juice in a blender. Blend until puree. Add 2 -4 ice cubes and blend on high speed until slushy. Check consistency and thickness of the drink. If you feel that it’s too thick, then add some more orange juice and blend again.
This makes a smoothie.  If you are interested in more of a juice, simply juice the carrots prior to blending with the OJ, ice and yogurt.
