30 Years and Growing!
Laguna Farm is growing into it’s 30th season this year and we invite you to celebrate with us.  Every month, we are highlighting a special component of the farm. From juicing to clothing swaps, to community potlucks and farm tours.  Come see how we grow and help us celebrate local agriculture along the way.

Juicing in the 
New Year
Would you like to join us in juicing in the New Year? Many CSA members are adding a juice box onto their regular order.  A “Juice Box” is a CSA box that is made up of 80% produce and 20% fruit that is selected with juicing in mind.  Try it!

Happy, Healthy New Year!
     Yes, we are holding strong with our resolutions for great heath and inspired living and hope you are enjoying this year as well.  Now that the kids are back in school, Laguna Farm families are settling into their routine.  It is great to see you back.  
     Cold weather has really slowed the growth of our greens.  As a result the farm store is bursting with saute’ greens that we can cut small and tender.  The produce and juice boxes have 1/2 pound bags of tender young spinach because the bunched greens are just not big enough to harvest.  At the same time, Miguel is spending hours every day seeding flats to put in the green house.  We have already started our spring starts and anticipate an abundant early summer season.
     Please review the recipes for fennel and cilantro.  These aromatics are often overlooked.  They are quite wonderful and can be enjoyed in a variety of ways.  Hopefully you will find one to your liking.

Produce Box Contents:
Salad Mix, Baby Spinach, Leeks, Cilantro, Celery, Beets or Fennel, Meyer Lemons.

Cilantro Rice Recipe Cilantro Rice

Heat 3T oil in a large pot over medium heat. Add 2 1/2 Cups jasmine rice and cook, stirring often, until starting to turn golden in spots, about 8 minutes. Stir in 1/2 yellow onion and cook until translucent, about 4 minutes.

Meanwhile, combine 2 large garlic cloves, 1 bunch cilantro, 2 cups broth, and 1 tsp salt in a blender.  Whirl until smooth, about 2 minutes. Pour over rice and stir in 2 more cups broth.  Bring to a boil, reduce heat to low, cover, and cook until rice is tender to the bite and liquid has been absorbed, 15 to 20 minutes.

Juice Box Contents:
Carrots, Apples, Spinach, Fennel, Beets or Oranges, Meyer Lemons, Celery.

Enjoy this super simple satisfying juice.
2 fennel bulbs
2 celery stalks
1 – 2 apples
1 lime
Fennel can act as a base in many juice blends.  Like celery or cucumber it adds a light and refreshing amount of liquid that compliments citrus, carrot, apple and any other stronger flavors.  Check out “In the Reboot Kitchen” for more fennel juicing ideas.
Remember, you can always add-on to your juice box with items from our online farm store. 

Spring Nettle

Fresh Spring Nettle
Laguna Farm is proud to present fresh spring nettle in the farm store.  Nettle is a nutritional power-house and worth doing a bit of research on.  I like this article in Food 52. Nettle is tender, satisfying and delicious this time of year.  We are selling it in 1/2 pound bags and expect to carry it throughout the late winter and early spring. Order it here and have it in your box next week!
