Leading up to the community potluck, we have lots of fun tasks to accomplish.

potluck produceToday we are seeing the first of the corn harvest and this has me thinking of what dish I would like to prepare for the potluck.  Do you decide on a dish based on what you want to cook or what you have available?  Me?  It is all about what is on the farm.  For example, I want to make ratatouille inspired by our eggplant that just came into season.  Unfortunately, the peppers have not ripened yet, so I need to alter the recipe.  I will omit the peppers and instead add corn and a little bit of broccoli and perhaps some fennel as my research is leading me toward expanding the flavor profile.  I also like to see a rainbow of color on my plate.  Green, purple, red, yellow, orange!  What a beautiful dish.

The secret of a good ratatouille is to cook the vegetables separately so each will taste truly of itself.
